I made this on Sunday. Can I hear a Yum?!? My husband requested a soup using Canellini Beans and in a quick internet search I found this site and this particular recipe. It was simple, simple in construction but long on time. Which is fine... reading the paper, cleaning out the old Christmas stuff, trying to use the dreary, drizzly day to its best advantage setting up for the challenges of the New Year and my New 2010 Life. The soup was even better the next day for lunches! Kudos to the site... it's well-designed and elegant, the recipes seem to be grea t -- I'm trying the scones and sweet potato gnocchi next -- AND it's inspirational. I need to do something with my life! ARRRRRGGGHHHH. Thanks.

Any of the dark greens (swiss chards, dandelion greens, kale, etc.) are so good for you and easy to add to a recipe like this. I try to work them in wherever I can, and soups are a great vehicle for dark greens.

This soup sounds fantastic, every once in a blue moon I do get inspired to make soups that involve a bit of time and effort. I love kale a lot, it needs more love from the general public (although I guess that could drive the price up)!
