So, I’m almost two-thirds of the way through my self-imposed Fall-2009-Gourmet-only restraint for November, and I will admit, it’s a lot harder than I thought. I’ve been staring longingly at my Bon Appetit’s, knowing, as I assume the editors at Conde Nast did, that the recipes in BA are a lot more home-cook-full-time-worker friendly. While Gourmet has made the after-thought attempt at the weekday-friendly recipes (and some are quite good), the majority of the magazine is dedicated to 3 hour+ long recipes with ingredients that, quite frankly, I’ve often not heard of. And this is (or, I suppose, was) Gourmet’s tragic flaw – so achingly aspirational, beautiful, untouchable, but in no way practical for the busy home cook trying to eat well on a budget.
One of my favorite things to do is hop on the treadmill at my gym, getting pumped for a nice 5-6 mile run, complete with elevations and surges, and pop on the Food Network (yes, I go to one of those fancy-shmancy gyms with TVs on every treadmill) to watch Ina smear some innocent bird with 10 pounds of butter, or Giada daintily mix three pounds of cheese into a casserole.
A tad incongruous, yes, but there is nothing I like better than working up a VERY big appetite (mine is quite substantial without the long run), whilst watching cooking shows and gathering ideas for that night’s supper.
I know I’ve been bad about posting lately, but, it’s been with good reason. It’s not that I haven’t been cooking – I have – I’ve just been cooking some of my favorite, comforting, familiar dishes. I love those dishes that I’ve cooked a couple dozen times, don’t need to look at a recipe, don’t need to make a grocery list before heading to the store, and can cook lazily and absent-mindedly, while letting my mind ponder other things.
Unfortunately, repetition and familiarity don’t produce any new Besotted posts…. So, I thumbed through my cookbooks and magazines until I found the dish that would snap me out of my culinary lethargy and back into the exciting world of experimentation, and this recipe was it.
Shrimp Scampi – Pantry Dinner
First, I can not believe that it has taken 6+ Months of Besotted’s existence for me to put up this Shrimp Scampi recipe. It’s one of my favorites (more so than my other favorites), is a consistent crowd pleaser, and is easy enough to make for a Weeknight Dinner, and it’s just butter-heavenly delicious.
It also has the added, though unintended, benefit of vindicating my slightly-neurotic frugality. I have to me a few confessions – I buy in bulk…. A LOT, I buy meat on sale and freeze it, I scan my grocer’s circulars for special deals, and I am adamant that they give me my $.10 off for using my own carrier bag. I know that I should be more focused on letting my culinary creativity guide me, and I do often, but, the fact is, I love to penny pinch.
Shrimp, Chilis & Ginger
I have a confession to make…. I started Besotted with more than just the goal of jotting down my favorite recipes and rambling about my culinary experiences. I desperately want to get people back into the kitchen, and for them to do more than peel back the plastic on a microwaveable meal or ‘add water’ to make a meal magically puff up before their eyes.
It’s an absurd quest in our multi-tasking, over-taxed, over-stressed world, but I’m taking it on, and if there’s one recipe in my arsenal to battle the delivery-guy, grocery-store-prepared-foods, and the like, it’s this one, because it takes 15 minutes from grocery bag to table. Not only is it easy and quick, but the flavors – fresh chilis, ginger, garlic, and lemon – will instantly remind you why fresh always tastes best.
